Vegan Crepes

  • 1 c non-dairy milk
  • ¾ c water
  • ¼ c olive or coconut oil
  • 1 T nutritional yeast
  • 1 ½ t flax meal
  • 1 ½ t lemon juice
  • ½ teaspoon salt
  • 1 c flour


  1. Combine all ingredients and blend.
  2. Let batter sit 20+ minutes while you prepare fillings.
  3. Preheat a non-stick pan to medium high.
  4. Add batter then lift and turn the pan to make each crepe a very thin layer.

These can be filled with any delicious combination of things. Pictured: mushroom & chives, tofu scramble, gochujang roasted butternut squash, garlic aioli, capers, and avocado. 🥑
