Vegan Black Bean Brownies
Ingredients
- 15 oz cooked black beans
- ½ c quick oats
- 1 T flax
- 2 T cocoa powder
- ½ t baking powder
- ½ t salt
- ¼ c coconut oil
- ½ c maple syrup
- ½ T vanilla extract
- ½ c chocolate chips
- more chocolate chips for the topping
Directions
- Preheat oven to 350 F.
- Blend oats into a flour.
- Blend in all remaining ingredients except chocolate chips.
- Gently mix in chocolate chips.
- Pour into 8×8 greased dish.
- Bake for 16 minutes.
- Top with more chocolate chips and bake for 2 more minutes.
- Let cool.
