Vegan Black Bean Brownies with Melted Chocolate Chip Topping

Vegan Black Bean Brownies


  • 15 oz can black beans, rinsed
  • 1/2 c quick oats
  • 2 T cocoa powder
  • 1/4 t salt
  • 1/2 c maple syrup
  • 1/4 c coconut oil
  • 1/2 T vanilla extract
  • 1/2 t baking powder
  • 1/2 c chocolate chips
  • more chocolate chips for the topping


  1. Preheat oven to 350°F degrees.
  2. Combine all ingredients except chocolate chips.
  3. Blend with food processor until smooth.
  4. Mix in chocolate chips.
  5. Pour into 8×8 greased dish.
  6. Bake for 15 minutes.
  7. Top with more chocolate chips and bake for 3 more minutes.
  8. Let cool.
