Vegan Black Bean Brownies with Melted Chocolate Chip Topping

Vegan Black Bean Brownies

Ingredients

  • 15 oz cooked black beans
  • ½ c quick oats
  • 1 T flax
  • 2 T cocoa powder
  • ½ t baking powder
  • ½ t salt
  • ¼ c coconut oil
  • ½ c maple syrup
  • ½ T vanilla extract
  • ½ c chocolate chips
  • more chocolate chips for the topping

Directions

  1. Preheat oven to 350 F.
  2. Blend oats into a flour.
  3. Blend in all remaining ingredients except chocolate chips.
  4. Gently mix in chocolate chips.
  5. Pour into 8×8 greased dish.
  6. Bake for 16 minutes.
  7. Top with more chocolate chips and bake for 2 more minutes.
  8. Let cool.
