Nomelette - Not an Omelette


  • 1.5 c garbanzo flour
  • 3 T nutritional yeast
  • 3 T ground flax seed
  • 1.5 t baking powder
  • 1 t cumin
  • 1 t salt
  • 1 t ground garlic
  • 1/2 t turmeric
  • 1/2 t paprika
  • 1/4 t black salt (kala namak)
  • 1/4 t ground black pepper or ground black cumin
  • water, as needed


  1. Combine all dry ingredients.
  2. Mix one-to-one with water before each use.
  3. Prepare a filling of a handful of vegetables.
  4. Spoon a thin circle of batter into a heated pan.
  5. Add vegetables and cook until slightly browned.

Nomelette, as in not an omelette and as in nom nom nom. 😂 This one is great for camping and is also gluten-free.
