Three Bean Salad

Light, bright, and protein-packed.


  • 1 c chopped green beans
  • 15 oz can red kidney beans
  • 15 oz can chickpeas
  • 2 orange bell peppers
  • 3 jalpe├▒os
  • 6 green onions
  • handful of cilantro
  • salt & pepper to taste
  • for the dressing:

  • juice from 2 lemons
  • 2 T olive oil
  • 2 T Dijon mustard
  • 1 T apple cider vinegar
  • 1 T pure maple syrup
  • 1/2 t salt
  • 1/4 t arrowroot or cornstarch


  1. Blanch the green beans and rinse the other beans.
  2. Mix beans, peppers, onions, and cilantro.
  3. Whisk dressing ingredients together and add salt & pepper to taste.
  4. Pour dressing over salad, mix, refrigerate for 30 min or longer.

I love this salad! It’s easy to make, lovely, and packed full of protein.
