Three Bean Salad

Light, bright, and protein-packed.
Ingredients
- 1 c chopped fresh green beans
- 15 oz can red kidney beans
- 15 oz can chickpeas
- 2 orange bell peppers
- 3 jalapeños
- 6 green onions
- handful of cilantro
- salt & pepper to taste
- juice from 2 lemons
- 2 T olive oil
- 2 T Dijon mustard
- 1 T apple cider vinegar
- 1 T pure maple syrup
- ½ t salt
- ¼ t arrowroot or cornstarch
for the dressing:
Directions
- Blanch the green beans.
- Rinse the other beans.
- Gently mix in the peppers, scallions, and cilantro.
- Whisk dressing ingredients together.
- Add salt & pepper to taste.
- Gently fold in the dressing.
- Refrigerate for 30 minutes.
