Gazpacho

A cold tomato, cucumber, and watermelon soup with a little kick.
Ingredients
- 4 tomatoes
- 1 cucumber
- 1/2 watermelon
- 1/4 c olive oil
- 2 shallots or 1/2 small onion
- 6 cloves of garlic
- 3 T red wine vinegar
- 1 T honey
- 1 t basil
- 2 t sambal
Directions
- Combine ingredients and blend.
Tucked away amongst grand hallways filled with sculptures and treasures of all sorts lies The Petrie Court Café at The Met where I took my parents on my Mom’s first visit to the city. We dined in style and laughed and lamented the too-short amount of time allocated for such a place—a lovely memory—and we ate the best gazpacho I’ve ever had in my life. This recipe was reverse-engineered from a glimpse of a list of ingredients provided by a very busy, very curt waiter to whom I am greatly appreciative.
