Three Bean Salad

Light, bright, and protein-packed.

Ingredients

  • 1 c chopped fresh green beans
  • 15 oz can red kidney beans
  • 15 oz can chickpeas
  • 2 orange bell peppers
  • 3 jalapeños
  • 6 green onions
  • handful of cilantro
  • salt & pepper to taste
  • for the dressing:

  • juice from 2 lemons
  • 2 T olive oil
  • 2 T Dijon mustard
  • 1 T apple cider vinegar
  • 1 T pure maple syrup
  • ½ t salt
  • ¼ t arrowroot or cornstarch

Directions

  1. Blanch the green beans.
  2. Rinse the other beans.
  3. Gently mix in the peppers, scallions, and cilantro.
  4. Whisk dressing ingredients together.
  5. Add salt & pepper to taste.
  6. Gently fold in the dressing.
  7. Refrigerate for 30 minutes.

I love this salad! It’s easy to make, lovely, and packed full of protein.
