Fermented Salsa 🌶

Fermented Salsa

Ingredients

  • 14 oz can diced tomatoes or 3 fresh
  • serrano pepper
  • red onion, â…“ to ½
  • handful of yellow corn
  • juice of one lime
  • cilantro
  • ½ T fine salt or 1 T course salt

Directions

  1. Chop veggies to similar sized pieces.
  2. Gently toss to combine.
  3. Add to a jar a bit at a time while pressing out any bubbles at each step.
  4. Store for 24h with a ferment lid or coffee filter to cover.
  5. Refrigerate and eat within a week.
