Fermented Salsa

Ingredients
- 14 oz can diced tomatoes or 3 fresh
- serrano pepper
- red onion, ⅓ to ½
- handful of yellow corn
- juice of one lime
- cilantro
- ½ T fine salt or 1 T course salt
Directions
- Chop veggies to similar sized pieces.
- Gently toss to combine.
- Add to a jar a bit at a time while pressing out any bubbles at each step.
- Store for 24h with a ferment lid or coffee filter to cover.
- Refrigerate and eat within a week.
