Rosemary, Sage, & Thyme Mushroom Stuffing
Ingredients
- 1 T olive oil
- 1 onion, diced
- 3 celery stalks, diced
- ΒΌ c dry white wine
- 16 oz mushrooms, sliced
- 1 t rosemary
- 1 t sage
- 1 t thyme
- Β½ t salt
- Β½ t pepper
- 1Β½ c vegetable broth
- 1 loaf day-old bread, cubed
- ΒΌ c fresh parsley, chopped
Directions
- SautΓ© onion and celery in oil until tender.
- Add wine and simmer until gone.
- Add mushrooms, rosemary, sage, thyme, salt, pepper.
- Simmer for 10 minutes.
- Mix cubed bread, veggies, parsley in a separate bowl.
- Add veggie broth until all of the bread is moist but not mushy.
- Cover with foil and bake for 50 minutes at 350 F.
- Remove foil and bake for 10 more minutes.
