Roasted Cauliflower

Ingredients

  • Salt and pepper
  • 2 T butter, melted
  • 1 cauliflower
  • 4 whole cloves garlic, skin on
  • 4 sprigs fresh rosemary
  • 4 leaves fresh sage
  • 4 sprigs fresh thyme

Directions

  1. Remove leaves from cauliflower.
  2. Smack the garlic enough to crack them, leave the skin on.
  3. Pour some of the butter mixture into upside down cauliflower.
  4. Turn right side up and brush with remaining butter, salt, pepper.
  5. Nestle into a bed of fresh garlic cloves, rosemary, sage, thyme.
  6. Bake for 45 minutes at 400 F.
  7. Broil for 3 minutes to brown—watch carefully!
  8. Pierce cauliflower with a paring knife to check for tenderness.

Simple and delicious—this is a great addition to any vegan holiday meal!
