Spicy Ginger Soba Noodle Soup with Tofu 🍜

Ingredients

  • 1 T garlic, grated
  • 1 T ginger, grated
  • ½ pkg extra-firm tofu, cubed
  • 3 T liquid aminos or soy sauce
  • 1 T rice vinegar
  • 1 splash mirin
  • 1 T sesame oil
  • 1 jalapeno, minced
  • 4 c veggie broth
  • 3 handfuls of greens, chopped
  • 1 red pepper, diced
  • 2 carrots, sliced
  • 1 handful green onions, sliced
  • 1 handful soba noodles
  • (optional topping) more garlic
  • (optional topping) cilantro
  • (optional topping) Sriracha

Directions

  1. Grate garlic and ginger.
  2. Cube the tofu, marinate with soy sauce and rice vinegar.
  3. Mince jalapeno.
  4. Slice red pepper, greens, carrots, green onions.
  5. Saute garlic, ginger in sesame oil until fragrant.
  6. Add jalapeno, veggie broth and simmer for 15 minutes.
  7. Cook noodles separately, according to the package.
  8. Add liquid aminos, rice vinegar, tofu, red pepper, carrots.
  9. Simmer until veggies are heated through.
  10. Add noodles to a bowl and ladle soup over the top.
  11. Top with green onions.
  12. Optionally top with garlic, cilantro, and Sriracha.
  13. Store veggie broth and noodles separately.

This soup has been rumored to cure colds. 😊
