Spicy Ginger Soba Noodle Soup with Tofu 🍜

Ingredients

  • 1 T garlic, grated
  • 1 T ginger, grated
  • ½ pkg extra-firm tofu, cubed
  • 3 T liquid aminos or soy sauce
  • 1 T rice vinegar
  • 1 splash mirin
  • 1 T sesame oil
  • 1 jalapeno, minced
  • 4 c veggie broth
  • 3 handfuls of greens, chopped
  • 1 red pepper, diced
  • 2 carrots, sliced
  • 1 handful green onions, sliced
  • 1 handful soba noodles
  • (optional topping) cilantro
  • (optional topping) Sriracha

Directions

  1. Grate garlic and ginger.
  2. Cube the tofu.
  3. Marinate with soy sauce, rice vinegar.
  4. Mince jalapeno.
  5. Dice red pepper.
  6. Slice greens, carrots, green onions.
  7. Saute garlic, ginger in sesame oil.
  8. Add jalapeno, veggie broth.
  9. Simmer for 15 minutes.
  10. Cook noodles separately.
  11. Add tofu and marinade.
  12. Add red pepper, carrots.
  13. Simmer veggies until heated through.
  14. Add noodles to a bowl.
  15. Ladle soup over the top.
  16. Top with green onions.
  17. Optionally top with cilantro, Sriracha.
  18. Store broth and noodles separately.

This soup has been rumored to cure colds. 😊
