Carrot Hummus

Ingredients

    Main
  • 4 large carrots
  • 1 can chickpeas
  • 3 garlic cloves
  • 2 T tahini
  • ½ lemon, juiced
  • ½ t red pepper flakes
  • 1 t salt
  • Garnish
  • 1 T olive oil
  • 1 T cilantro, chopped
  • ½ t red pepper flakes

Directions

  1. Boil carrots until tender.
  2. Reserve 1 cup carrot water.
  3. Blend main ingredients until smooth, adding carrot water as needed.
  4. Garnish with olive oil, cilantro, red pepper flakes.

Who knew carrots could be so good in hummus? 😁
