Carrot Hummus
Ingredients
- Main
- 4 large carrots
- 1 can chickpeas
- 3 garlic cloves
- 2 T tahini
- ½ lemon, juiced
- ½ t red pepper flakes
- 1 t salt Garnish
- 1 T olive oil
- 1 T cilantro, chopped
Directions
- Boil carrots until tender.
- Reserve 1 cup carrot water.
- Blend main ingredients until smooth, adding carrot water as needed.
- Garnish with olive oil and cilantro.
Who knew carrots could be so good in hummus? 😁
