Focaccia

Ingredients

  • 3 c flour
  • 1 t instant yeast
  • 1 t salt
  • 1½ c water
  • olive oil

Directions

  1. Mix flour, yeast, salt, and water until well blended.
  2. Add a little more water if the dough seems too dry.
  3. Stretch and fold.
  4. Cover for 30 minutes.
  5. Stretch and fold.
  6. Add a layer of olive oil to a half sheet baking tray.
  7. Stretch out the dough onto the olive oil lined baking tray.
  8. Heat a glass of water in the microwave for 90 seconds to add humidity.
  9. Place the dough into the microwave to sit for 30 minutes.
  10. Add a layer of olive oil to the top of the dough.
  11. Sprinkle a little salt on top.
  12. Dimple the dough.
  13. Bake at 425 degrees for 18 minutes.
  14. Let sit for 10 minutes.

I love this 3-cup version because it fits perfectly in a half sheet pan and I can bake it in the toaster oven. When using local Camas Country Mill Organic Sifted Bread Flour (approximate protein 12-13%), I increase the water to as much as 1⅔ cups.
