Ingredients
- 3 c flour
- 1 t instant yeast
- 1 t salt
- 1½ c water
- olive oil
Directions
- Mix flour, yeast, salt, and water until well blended.
- Add a little more water if the dough seems too dry.
- Stretch and fold.
- Cover for 30 minutes.
- Stretch and fold.
- Add a layer of olive oil to a half sheet baking tray.
- Stretch out the dough onto the olive oil lined baking tray.
- Heat a glass of water in the microwave for 90 seconds to add humidity.
- Place the dough into the microwave to sit for 30 minutes.
- Add a layer of olive oil to the top of the dough.
- Sprinkle a little salt on top.
- Dimple the dough.
- Bake at 425 degrees for 18 minutes.
- Let sit for 10 minutes.
I love this 3-cup version because it fits perfectly in a half sheet pan and I can bake it in the toaster oven. When using local Camas Country Mill Organic Sifted Bread Flour (approximate protein 12-13%), I increase the water to as much as 1⅔ cups.
