Vegan Mushroom Burgers


Ingredients

  • 1 lb mushrooms, quartered
  • 1 lrg onion, diced large
  • 2 c cooked brown rice
  • ¼ c soy sauce
  • 1 can tomato paste, 6 oz
  • 2 T miso
  • 1 T basil
  • 1 t thyme
  • 1 t sage
  • ¼ t allspice
  • ½ c fresh cilantro, chopped
  • 1 ½ c vital wheat gluten
  • For serving: buns, lettuce, tomato, onion, mustard, & ketchup.
  • Optional for serving: basil, cilantro, mint.

Directions

  1. Pulse mushrooms in a food processor.
  2. Mix in everything else except wheat gluten and blend.
  3. Add vital wheat gluten and blend just until fully incorporated.
  4. Form palm-sized patties about ¼-inch thick.
  5. Bake at 350 degrees until firm—about 30 minutes.
  6. Let cool and transfer to a freezer-safe bag for storage.

🍔 These are excellent to freeze for later!
