Vegan Mushroom Burgers

Ingredients
- 1 lb mushrooms, quartered
- 1 lrg onion, diced large
- 2 c cooked brown rice
- ¼ c soy sauce
- 1 can tomato paste, 6 oz
- 2 T miso
- 1 T basil
- 1 t thyme
- 1 t sage
- ¼ t allspice
- ½ c fresh cilantro, chopped
- 1 ½ c vital wheat gluten
- For serving: buns, lettuce, tomato, onion, mustard, & ketchup.
- Optional for serving: basil, cilantro, mint.
Directions
- Pulse mushrooms in a food processor.
- Mix in everything else except wheat gluten and blend.
- Add vital wheat gluten and blend just until fully incorporated.
- Form palm-sized patties about ¼-inch thick.
- Bake at 350 degrees until firm—about 30 minutes.
- Let cool and transfer to a freezer-safe bag for storage.
